Mead

Mead (Hydromel in french) is one of the oldest alcoholic beverages known. Dry, semi-dry or sweet : there is a choice for everyone. Sometimes compared to Chouchen (in French area called Bretagne) mead differs : the fermentation is due to some yeasts for Hydromel and apple juice for Chouchen. Our meads "Clos des Sentinelles" are made with honey from 320 colonies settled in Languedoc Roussillon in selected areas : forest, scrubland, mountains and coastline beyond the spaces reserved for crops. They are assembled in domain "Clos Sentinels" in concert with winemakers and agronomists. Each step of the process (fermentation, stabilization, livestock and clarification) are controlled by analysis to produce a wide range of quality wine mead.
