A cousin of the black tapenade, the green tapenade is made in Provence from green olives, capers, anchovies and olive oil.
The green tapenade develops sweeter and fresher flavours than the black tapenade. It can be used in the same way as black tapenade, as a dip for vegetables or crackers, or as a sauce for pasta dishes, rice or grilled meats.
>However, it is more versatile than black tapenade. It goes well with more foods. For example, mixed with mayonnaise, it makes a flavourful sauce for sandwiches or hamburgers. You can also add it to the dressing of a green salad.
It can be eaten like its sister, the black tapenade, on toast or as a condiment (salad, meat and cheese).
