Rouille is a delicious traditional sauce from Provence. Rouille is prepared from a base of oil, garlic, egg yolk, mustard and vinegar. Its thick and creamy texture is obtained by mixing these ingredients in a mortar with a little fish stock or hot water.
The taste of rouille is both spicy and mild, with a slightly acidic flavour from the vinegar.
Rouille is traditionally served with fish soup, a speciality of Provençal cuisine. It is also delicious with seafood, grilled fish or even roasted vegetables. Rust can also be used as a condiment, as a substitute for mayonnaise: with fish, pierrades, fondues, hard-boiled eggs, etc.
With its intense red colour and its rich and complex taste, rouille is a real explosion of flavours in the mouth that will satisfy all gourmet palates.
