Pure duck rillettes is an artisanal speciality made from duck meat, candied and crumbled to obtain a melting and delicate texture in the mouth. This preparation is 100% pure duck, with no other meat added (such as the pork that is always present in pâtés).
The duck rillettes are cooked for a long time over a low heat in duck fat, crushed and seasoned only with salt and pepper to give them their characteristic "stringy" appearance.
